Kale Pesto w/ Pappardelle
A slightly spicy, earthy pesto for dinner last night. Super Yum.
To make Kale Pesto, you will need to whizz / blend:
1 X Bunch Washed Kale (Coarsely Chopped)
1 X Handfull Toasted Pecans
1/2 Cup Extra Virgin Olive Oil
1 X Cup Parmesan Cheese (Coarsely Grated)
2 X Small Garlic Gloves
Add 200 gm of fresh Ricotta Cheese to a separate bowl & combine with pesto. Boil salted water, add Pappardelle & cook 4-5 mins or as per packet instructions. Strain pasta, mixing through pesto & add a pinch of Sea Salt / Cracked Pepper / Parmesan to taste. Serves 3 - 4 people.
